I have been admitted to SOAS in LLM with full-funded Scholarship) and NYU with Dean's Merit Award. I am confused which to choose. Can you please give me feedback so that I can assess pros and cons to those offers.

NYU is one of the best law schools in the US. SOAS is a solid program in the UK, albeit it has slipped as of a late. It is a tough choice in that SOAS is not ranked as high as NYU but other than living costs, you're covered. I would give preference to NYU, just because it has consistently been ranked in the top 5 law schools in the US for as long as I can remember, and I do not see that changing. It has firmly established itself as a premier law school and while law schools shift around in rankings, NYU has remained solidly in the top 5 for a long time. How much does the merit award cover?

Merit award covers 40,000USD of tuition fees. And approximate tuition fee for NYU is 53,000USD+accommodation and living costs. I am more concerned about the expenditure, since I am from South Asia and does not much about USA and its employment opportunities.
