Do you guys recommend IPKM at Maastricht University? what are my job options afterward in the NL and EU? Any help would be appreciated.

On job options: I don't know what your situation is, but law-related master's degrees are typically not great enablers of international mobility, especially if you can't speak the local language. Probably best not to expect to make the transition to Europe from elsewhere, if that's your goal.
