I found the Queen Mary University of London to have an interesting LLM in Human Rights Law. They even offered summer internships with the British Institute of Human Rights

Do you have any restrictions in terms of geographical location? Columbia and NYU could be good options - NYU has a very strong faculty in human rights and Columbia has various clinics and a research institute.
Otherwise, there a few in mainland Europe: Lund and Leiden for instance. In the UK, LSE, Oxford, Essex and Cambridge.
