Hello everyone,
I would be glad to know if anyone has ever heard about the existence of LLMs in Privacy Law/Data Protection Law.

Yes - sort of. I have one in e-commerce law which included a substantial component of European data protection law (in my case module and mini-thesis). These days there are plenty of such and becoming more common, even for distance learning. I'm looking for them now myself because (following GDPR finalization) they're going to be in huge demand for Data Protection Officers enterprises in or trading with Europe - on a constructive reading of the legislation I don't think commercial certifications will do in the long run, so if you're not a lawyer you'll probably end up needing a LLM.
