I sent my transcripts a week ago through FedEx. On LSAC's website it still appears "missing transcript" and "one transcript action required".

Is this normal? Do I have any way to figure whether they have received my transcripts and are being processed?

Yes it is normal. No worry. It takes up to two weeks for LSAC to process transcripts and update your status.
