Is anyone planning to apply to Essex for IHL? How hard is it to get into the uni and what do they look for in an application?

Essex is not very competitive. You’ll probably get in regardless of marks and personal statement.

Did anyone get an offer from Essex so far for the 2020-21 batch?

I have applied on January 9th and I have not received anything yet, despite the website states they aim to make a decision within two weeks.

I applied in December end and received an offer around two weeks ago. They're taking more than two months to reply to applications. So don't worry, you will get your offer soon. Maybe you can get in touch with them to speed up the process. Try calling them up instead of sending mails.
