Does anyone know the process for seeking deferral of admission until Fall 2011 at either Oxford or Cambridge?
Are they picky about the reasons for granting deferral? I'd like one this year because I would be giving up $150K/year in employment, as opposed to starting next year. Is this a sufficiently valid reason for them to exercise their discretion to grant deferral?

I think you should try telling them that you just cant support yourself for an entire year at university now and if they gave you one year to keep working (and making money) youd be able to take up your position at university and really dedicate 100% of your time there to your studies. Its all in the way you write. If you tell them you only want to defer so that you can earn some extra money at the end of the year, they might not think its a fair reason and decide to give your place to the next in queue. But if you go and say that you wont be able to actually accept their offer and youre bound to give up your dream of going to Oxbridge without a deferral, they may sympathise with you. My opinion though there may be others who dont agree
