What's the best college for LLM students in Cambridge?

It depends on what you want. Your classes are all taught at the faculty so teaching is not relevant but things like whether you want a big or a small college, graduate only, all female are important. The truth is its a fairly random process by all accounts and most people are just going to adjust to what ever they get. I wouldn't say college was unimportant I think its actually very important and I love where I am but I would say that its more about what suits you as a person than as an LLM student.

I've applied to Wolfson and St Edmunds beacause they are graduate colleges and only accept mature students.

In think the important aspect to consider is if your studying for a postgraduate not to be stuck with undergraduate students well esp. where there is predominitely more undergradutes. I have heard stories about about the trivial stories of loud music and crazy alcohol consumption up to 4am in the morning. So chose wisely
