I've been offered a piace for two LLMs in International Human Rights Law, one at the University of Essex and the other in NUI Galway.
Do you know which one is the best? I'd be very grateful If you had any kind of information.

Hi, I don't think there is a such thing as the "best" when choosing between these two programs. It depends on what you want to study and with whom.

As for the student experience, let me suggest you that you join the new Facebook group for students preparing to undertake the LL.M.s in international human rights law and international human rights and humanitarian law at the University of Essex during the 2015-2016 school year. Several alumni are available to answer questions and will post information and advertise things like old flats and bikes there:

Schabas teaches at Galway, if I recall correctly. I don't think Essex has anybody of that caliber honestly
