Could anyone please tell me, in which african countries an L.L.M in general is a requirement for law practice as a judge, a barrister, a solicitor, prosecutor or any other regulated law professions?
Which regulated professions in african countries or other require specifically an LLM in Tax Law?

LLM is not a general requirement as such. emphasis is mainly on the work experience as a practicing advocate. Most countires list hteir requirements to include practice and not necessarily an LLM.
An LLm is just an added advantage.

To be a teacher at Universities LL.M is a requirement in Ethiopian universities

Sure, an LLM is a requirement for one to be a lecturer in most universities, especially in East Africa.

In most African countries it is not required of an applicant to obtain an LLM in order to be admitted to practise as a lawyer or prosecutor.However, most law lecturers and professors have have LLMs and LLDs or PhDs.
