The University of San Diego School of Law offers summer programs in various cities all over Europe and Mexico. I was in Paris this summer and liked it a lot.

I think if you search for Summer Law Study or something similar on google you'll get some results as well. I know I saw a site (maybe from the ABA?) which listed summer law programs. Good luck!
