In the UK Oxford, LSE, Kings College and Cambridge offer summer law school courses.
You may also be interested in summer law school in the States such as Columbia law school, Wayne law school, Vanderbilt or NYU.
Hope it helps.

Hi Vindaloo, UCL offers a summer law school program. Exeter provides an introduction to law during summer and Duquesne University in Ireland a three weeks- ABA approved law school in EU law, International Arbitration and Dispute Resolution and in International Human Rights. Also heard of a program at Bristol University although this is very basic. It simply introduces to the type of work to expect as graduate students.

Hi,
Oxford offers an international human rights law summer school every year. It's quite expensive, but you can apply for bursary. Check here: https://www.conted.ox.ac.uk/courses/summerschools/ihrlss.php
