I know a lot of universities require LORs on letterheads but many organisations have a rule against providing references to employees using the organisational letterhead. Is there a way around this?

If you’re applying to US law schools most will require applications through LSAC. So your recommenders will submit their LORs through LSAC which is done digitally so no letterhead is required.
