I can't seem to find LLMs that are taught in english in Spain and France. Do you guys know of any Uni that does?

No, but there is a good program in Portugal: Lisbon's LL.M. in International Trade and Business, at Universidade Catolica.

This reply probably comes way too late, but actually there is such a programme offered in English, its an LL.M. of Law in a European and Global Context. You can choose from many different seminars and put your main focus on HR and legal theory.
